Passopisciaro, a renowned winery located on the slopes of Mount Etna in Sicily, produces the Etna Rosso Passorosso, a wine that beautifully captures the unique terroir of this volcanic region. The wine is crafted primarily from the Nerello Mascalese grape, a varietal known for its elegance and complexity. The vineyards are situated at high altitudes, which contribute to the wine's vibrant acidity and refined tannins. The winemaking process involves careful fermentation and aging in large neutral oak barrels, allowing the wine to develop its characteristic flavors without overpowering oak influence. The Passorosso offers a captivating flavor profile with notes of red berries, cherries, and a hint of minerality, reflecting the volcanic soil. It pairs wonderfully with grilled meats, roasted vegetables, and aged cheeses.
